Attention athletes and Whole30’ers! Breakfast is the best meal of the day, am I right? Here’s a super easy and hearty breakfast recipe that takes literally minutes to make, and will keep you fueled for long work days and intense training sessions. It’s a variation on a classic oatmeal recipe, but there are no oats involved! It’s 100% Paleo and 110% delicious, and can easily be adapted for your taste preferences.
Ingredients:
- 1/4 cup unsweetened vanilla almond milk
- 2 eggs
- 1 tsp pure vanilla extract
- 1/2 diced apple, peeled
- 2 large spoonfuls of almond meal
- cinnamon, to taste
Directions:
Whisk or blend eggs, almond milk, vanilla extract, and cinnamon until smooth. Spoon almond meal into a microwave safe bowl. Pour mixture into bowl, mix together. Add diced apples, mix. Sprinkle more cinnamon on top. Microwave for 1:30 on high, then stir. Microwave for another 30-45 seconds, depending on strength of your microwave. Stir, and eat!
You can also cook on a stovetop over low-medium heat instead of a microwave, but make sure to stir frequently so it doesn’t stick.
Other great substitutions if you’re not a fan of apple cinnamon – blueberries, pumpkin, walnuts, raisins, or pecans. All of these taste great as well!
