Sometimes when switching to Paleo, you miss the comfort and convenience of certain Paleo foods.  This weeks recipe contribution from Megan R makes a satisfying “cereal” type blend using completely paleo ingredients.  Enjoy with coconut milk or by itself!

 

16 oz large coconut shreds
12 oz raisins
8 oz sliced almonds
8 oz walnuts
8 oz finely shredded coconut
1 cup freeze dried strawberries
1 cup freeze dried bananas
1/4 cup honey
1 Tbsp cinnamon

Preheat your oven to 350 degrees. Mix almonds, walnuts, and large coconut shreds in a bowl and bake on a cookie sheet until coconut shreds brown, about 5 to 10 minutes. You may need to use two cookie sheets.  Heat honey in the microwave to liquify. Once the nuts are out of the oven, pour honey over the nuts and sprinkle the cinnamon over the nuts. Stir. Add finely shredded coconut to coat the nuts. Stir in raisins and freeze dried fruit. Store in an airtight container or in ziplock bags.  For a smaller version of this recipe visit our recipe blog.
